The Plotting Parlour is a dimly lit cocktail bar in Hove that opened in 2023 as a follow-up to the Old Steine original. It draws a well-dressed, pre-dinner crowd who come for properly made classics and house cocktails with a bit of flair. Drinks range from twists on the Negroni to dessert-leaning espresso martinis, alongside natural wines, beers and a short list of small plates. It's table service only, calm but sociable, and the kind of place where one drink often turns into a fair few more.
