Apiary is one of Brighton's more intriguing openings, run by two beekeepers who've swapped hives for bottles without losing any of the patience or obsession. Inside, it's all warm, golden tones and gently flickering candles, with shelves filled with biodynamic wines, wild ferments, and plenty of mead, plus cocktails that incorporate bee-friendly touches like pollen and floral infusions. The food follows the same ethos, using seasonal ingredients and a good hit of local and international honey and bee pollen. Whether you're here for a funky glass, a mead flight or their “Taste of Honey” lineup, it's a quietly lush spot to enjoy something a bit different.
